Roasted Tomato Cream Gnocchi

MeasureIngredient
1 pt.cherry tomatoes, halved
1 cupdiced leeks
2 tsp.olive oil
kosher salt and pepper to taste
3/4 cupheavy cream
1/4 cupdry sherry
1 lb.gnocchi, cooked
1 cupCalifornia Ripe Olives, halved
1 cupblanched green beans
Directions:
Toss cherry tomatoes and leeks in 2 teaspoons of olive oil. Season with salt and pepper to taste and pour in one even layer onto a baking sheet. Roast in a 375°F oven for 25-30 minutes until lightly browned. Heat cream and sherry in a large sauté pan over medium heat for 2-3 minutes. Toss in roasted tomatoes, leeks, gnocchi, California Ripe Olives and green beans and cook until heated through. Serves 4.
