Galician Roasted Potatoes

MeasureIngredient
1 tsp.olive oil
2 oz.chorizo sausage, crumbled or chopped
12 oz.new potatoes, quartered
1 clovegarlic, sliced
3/4 cupCalifornia Ripe Olives, wedged
2 cups (4 oz.)chopped chard
1/4 tsp.kosher salt
Directions:
Heat oil in a large oven proof sauté pan or tart tatin pan over medium-high heat. Add chorizo and brown for 3-4 minutes. Toss in potatoes and garlic and cook for 2-3 minutes, then add California Ripe Olives and place in a 425°oven for 20 minutes. Stir in chard, season with salt and return to oven for 5-7 minutes. Serve immediately. Serves 4. Nutritional Analysis Per Serving: Calories 160, Fat 9g, Cholesterol 10mg, Sodium 540mg, Carbohydrate 14g, Protein 5g, Calories from fat 50%
