Galician Roasted Potatoes

| 1 tsp. | olive oil |
| 2 oz. | chorizo sausage, crumbled or chopped |
| 12 oz. | new potatoes, quartered |
| 1 clove | garlic, sliced |
| 3/4 cup | California Ripe Olives, wedged |
| 2 cups (4 oz.) | chopped chard |
| 1/4 tsp. | kosher salt |
Heat oil in a large oven proof sauté pan or tart tatin pan over medium-high heat. Add chorizo and brown for 3-4 minutes. Toss in potatoes and garlic and cook for 2-3 minutes, then add California Ripe Olives and place in a 425°oven for 20 minutes. Stir in chard, season with salt and return to oven for 5-7 minutes. Serve immediately. Serves 4.
