Brussel Sprout Bowties

| 2 Tbsp. | unsalted butter |
| 1 lb. | brussel sprouts, quartered |
| 2 oz. | sliced prosciutto*, coarsely chopped |
| 1 Tbsp. | minced garlic |
| 2 tsp. | chopped sage |
| 1 cup | California Ripe Olives, halved |
| 1 1/2 Tbsp. | lemon juice |
| 1/2 lb. | farfalle pasta, cooked |
| kosher salt and black pepper to taste |
Heat butter in a large sauté pan over medium heat. Add brussel sprouts and proscuitto and cook for 4-6 minutes until golden, stirring occasionally to prevent sticking. Stir in garlic and sage and continue cooking for 1 more minute until browned.
Pour in California Ripe Olives and lemon juice and toss with pasta. Season to taste with salt and pepper. Serves 4.
* substitute ham if desired
Serving suggestion: Garnish with parmesan cheese on top.
