Sweet and Savory Lamb Bulgur

MeasureIngredient
1 tsp.olive oil
8 oz.coarsely chopped lamb loin
1/2 tsp.kosher salt
1/3 cupdried currants
1/4 cupsliced green onions
2 tsp.minced garlic
3 cupscooked bulgur
1 cupCalifornia Ripe Olives, halved
1 Tbsp.sherry vinegar
1/4 tsp.ground cinnamon
cayenne pepper to taste
1/4 cuptoasted slivered almonds
Directions:
Heat olive oil in a large high-sided sauté pan over medium-high heat. Add lamb, season with salt and cook for 3-4 minutes until browned, stirring occasionally. Add currants, green onions and garlic and continue to cook for 1 more minute. Stir in bulgur, California Ripe Olives, vinegar and cinnamon. Season to taste with a dash of cayenne pepper and top with almonds just before serving. Serves 4. Nutritional Analysis Per Serving: Calories 370, Fat 18g, Cholesterol 45mg, Sodium 530mg, Carbohydrate 38g, Protein17g, Calories from fat 42%.
