Sweet and Savory Lamb Bulgur

| 1 tsp. | olive oil |
| 8 oz. | coarsely chopped lamb loin |
| 1/2 tsp. | kosher salt |
| 1/3 cup | dried currants |
| 1/4 cup | sliced green onions |
| 2 tsp. | minced garlic |
| 3 cups | cooked bulgur |
| 1 cup | California Ripe Olives, halved |
| 1 Tbsp. | sherry vinegar |
| 1/4 tsp. | ground cinnamon |
| cayenne pepper to taste |
| 1/4 cup | toasted slivered almonds |
Heat olive oil in a large high-sided sauté pan over medium-high heat. Add lamb, season with salt and cook for 3-4 minutes until browned, stirring occasionally. Add currants, green onions and garlic and continue to cook for 1 more minute.
Stir in bulgur, California Ripe Olives, vinegar and cinnamon. Season to taste with a dash of cayenne pepper and top with almonds just before serving. Serves 4.
