B & B Salmon (Diabetic Version)

MeasureIngredient
1 lb.Poached salmon, flaked into 2-inch chunks
4 cupsBroccoli florets, blanched
1 (15 oz.) canWhite beans, rinsed and drained
1 cupCalifornia Ripe Olives, whole, pitted
1/4 cupLemon juice
1/4 cupChopped tarragon
Salt and pepper to taste
Directions:
In a large bowl, gently combine salmon, broccoli, white beans and California Ripe Olives. Toss with lemon juice and tarragon. Season to taste with salt and freshly ground black pepper. Serve cold or room temperature. Serves 4. Nutritional Analysis Per Serving: Calories 380, Fat 17g, Cholesterol 64mg, Sodium 410mg, Carbohydrate 29g, Protein 32g, Calories from fat 38% Exchanges: 3 meat, 1/2 very lean meat, 1 1/2 vegetable, 1 1/2 fat.
