Tapenade

| 3/4 cup | California Ripe Olives, chopped |
| 1 Tbsp. | Chopped fresh parsley |
| 2 Tbsp. | Finely grated fresh carrots |
| 2 Tbsp. | Chopped frozen green peas |
| 1 Tbsp. | Finely chopped onion |
| 1 Tbsp. | Finely chopped red pepper |
| 2 drops | Red pepper sauce |
| 1/2 tsp. | Minced fresh garlic |
| 1 Tbsp. | Lemon juice |
| 1/2 tsp. | Italian seasoning |
| 1 tsp. | Fresh cilantro, finely chopped |
| 1 | Finely chopped plum tomato |
| 1 tsp. | Spicy mustard |
Combine all ingredients in a bowl; mix well. For a smooth texture, place all ingredients, unchopped, in a food processor or blender and process until smooth. Garnish with a parsley sprig and an olive. Makes about 1 cup. Note: for spicier taste, add more red pepper sauce. For middle eastern flavor, add curry powder. For a southwestern flair, add chili or cayenne pepper.
