Mexican Cabbage Slaw
Serves 4
Ingredients
- 2 cups green cabbage, shredded
- 2 cups red cabbage, shredded
- 2 chicken breasts, cooked and shredded
- 1 cup California Black Ripe Olives, sliced
- 1 cup Roma tomatoes, Seeded and diced (1/4-inch)
- 1 cup canned black beans, rinsed and drained
- 1 cup cilantro, chopped
- 1/4 cup lime juice
- 1 tablespoon olive oil
- 2 tablespoons jalapeno peppers, minced
- 1 teaspoon Kosher salt
- 1 teaspoon garlic, minced
- 3/4 teaspoon cumin, ground
Directions
- In a large mixing bowl, combine green cabbage, red cabbage, chicken, California Ripe Olives, tomatoes, black beans and cilantro.
- Season with lime juice, olive oil, jalapenos, salt, garlic and cumin.*Serving suggestion: Serve with warm corn tortillas.
