Simmer

Lots of recipes require that you bring your pot full of ingredients up to a boil, then cook on a simmer for the duration. To simmer, it's necessary to turn the heat down low enough that you no longer see a rolling boil (large bubbles), but still see some action in the pot. If the instructions call for covering the pot, you will know if your heat is too high if the activity in the pot disrupts the lid's ability to sit still.
