The Healthy Couch Potato.

Looking to score on the snack front? No need to pile on the junk food. Consider substituting options like California Ripe Olives and nuts. They're flavorful, they've got fat-just the healthy monounsaturated kind-and there's plenty to sink your teeth into. I say run with it!

Willing to go the extra yard? Whip up a snack filled with all the goods. With California Ripe Olives, spinach and potato skins (which are where those russets hide all their vitamins), the guys will love these. Just a hint of cheese and our reliable old timer, ketchup, and you've just entered a league of your own. 

 

 
 

Popeye Potato Skins

  • 4 medium russet potatoes, baked and quartered lengthwise
  • 1 cup (4 oz.) frozen chopped spinach, thawed and drained
  • 1 cup sliced California Ripe Olives
  • 2 oz. chopped sliced ham
  • 1/2 cup shredded Asiago cheese
  • 1 cup prepared ketchup

Scoop flesh out of potato skins, leaving a 1/4-inch border, and save for another use. Line potato skins up on a clean baking sheet, skin side down. Combine spinach, California Ripe Olives, ham and cheese. Sprinkle approximately 1 tablespoon of mixture onto each potato skin. Place under a broiler for 3-5 minutes on high setting until golden brown. Serve with ketchup for dipping. Serves 4.
