Serve this Nutty Wild Rice alone for lunch or spoon it up as a side dish with poultry or fish at dinnertime. Flavored with California Ripe Olives, toasted almonds and carmelized onions, you'll be happy to find that you can have your carbs and enjoy them too!
Heat oil in a medium sauté pan over medium heat. Add onion and cook for 3-5 minutes, stirring occasionally until lightly browned. Remove from heat and stir in sherry vinegar. Combine with wild rice, white rice, California Ripe Olives and almonds in a large mixing bowl. Season to taste with salt and pepper. Serves 4-6.
