Kill Two Birds with One Potato.

Next time you're preparing mashed potatoes for dinner, hold onto those potato skins and invite your kids into the kitchen. The little tykes can help you turn these unwanted skins into their very own nutritious snack.

 

 

 
 

Kill Two Birds with One Potato (the recipe)

  • 4 potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup sliced California black ripe olives
  • 1 Tbsp chopped chives

Cut potatoes in half lengthwise. Scoop out flesh and reserve for mashed potatoes. Place empty skins under a medium-high broiler for 2-3 minutes until very lightly toasted. Remove from broiler and sprinkle with cheese, California Ripe Olives and chives. Broil once again for 2-3 minutes until cheese is melted and lightly browned.
