Fueling for Endurance.

O.K. Dr. Atkins may disagree ...But, CARBS ARE GOOD FOR YOU! We haven't been eating them for thousands of years just because it was trendy. By chomping down on whole grains, fruits and vegetables, our bodies have the energy to keep our muscles moving and our brains functioning.

So with our muscles rockin' and our brains in tune, it'll be easy to make the right choices when it comes to carbs. Start by limiting  simple sugars in favor of whole grains.

Look for grains like millet, quinoa and bulgur to get you started. This Gold Metal Quinoa recipe is quick and easy, with your favorite flavors of California Ripe Olives, corn and green onions mixed right in. Less time in the kitchen could mean one more lap around the block...or just a few more minutes of well-earned relaxation.

 
 

Gold Medal Quinoa

  • 1 1/2 cups Quinoa
  • 3 cups Chicken broth
  • 1 1/2 cups Yellow corn kernels
  • 3/4 cup Sliced California Ripe Olives
  • 3/4 cup Sliced green onions
  • Salt and cayenne to taste
  • 1/2 cup Toasted slivered almonds
  • Salt and pepper to taste

Place quinoa and chicken broth in a medium sized saucepan and bring to a boil. Turn heat down to a simmer and cook for 12-15 minutes until all liquid is absorbed. Stir in corn, green onions and California Ripe Olives. Season to taste with salt and cayenne pepper. Serve hot, warm or cold. Serves 4.
