Personal Pizzas On The Grill.

If you think “delivery guy”, the minute someone says the word “pizza”, think again. Pizza isn’t a great go-to just because it tastes so delicious, but because it’s easy and fun to make as well. Grocery stores are making the job a lot simpler these days, selling prepared pizza dough that tastes just like homemade.

Of course, once you have the dough, all you need to do is roll it out, cover with your favorite toppings and throw it in the oven, right? Well, that may be the most common method, but how about tossing it on the grill from time to time? When the weather is right, an excellent way to make a seasonal pizza out of your year-round favorite food is giving it that smoky charred flavor that comes from the ultimate outdoor appliance.

All you need to do is make sure you have a clean, lightly-greased grill rack to start. Preheat your grill on high, then simply slide your untopped pizza dough directly onto the grill. Cook a few minutes until browned on the bottom, then transfer to a clean plate or cutting board placing the cooked side up. Now, place your toppings on the cooked side and side the whole thing back onto the grill until the bottom is nice and crisp and the top is warm and bubbly with flavor.

Try this California-style Grilled Pizzetta recipe with arugula, California Ripe Olives and peppers and you’ll see what I mean.  But don’t stop there. One of the greatest things about making your own pizza is that you can cater to the tastes of each individual in the family. Tomato fearing kids? Use pesto. Pops likes his spice? Add a few jalapenos or pepper flakes to his. In fact, let all of these picky chefs into the kitchen to create their own and it’s less work for you.

Grilled Pepperoni Olive Calzones are another way to go. These freeze really well and make for great afternoon noshing. Then again, with a recipe this good, leftovers are highly unlikely.
